Marco de Matos is a restaurateur driven by a passion for hospitality, flavour, and creating spaces that bring people together through food.
Throughout his career, Marco has contributed to the success of several respected dining destinations, including the acclaimed Baia Seafood Restaurant, where he played an integral role within the team behind its continued growth and reputation for exceptional dining experiences. His journey in the Paarl Winelands also includes El Picoteo, an alfresco dining concept on the Rhebokskloof Wine Estate celebrating tapas, familiar flavours, and relaxed shared meals designed to welcome guests of every generation.
With Lume, also situated on the Rhebokskloof Estate, Marco presents a more refined expression of his vision. Inspired by the surrounding vineyards and landscape, Lume returns to the elemental power of fire — creating an evening dining experience where craftsmanship, seasonality, and atmosphere exist in harmony.
Across each concept, Marco’s philosophy remains constant: exceptional food, thoughtful hospitality, and experiences that invite guests to gather, connect, and return.
Head Chef — Lance Peters
With over 23 years of culinary excellence, Head Chef Lance Peters has built a career defined by passion, precision, and relentless creativity. What began as a deep curiosity for flavour and technique evolved into a lifelong dedication to the art of cooking.
Starting at the foundation of the kitchen brigade, Lance refined his craft through discipline, long hours, and an unwavering pursuit of mastery. Opportunities to work both locally and internationally broadened his technical expertise while cultivating a global appreciation for diverse cuisines, ingredients, and culinary traditions. These experiences shaped a distinctive style — one that balances classical technique with contemporary innovation.
Throughout his career, Lance has contributed to the success of several respected establishments, consistently elevating kitchen standards and creating memorable dining experiences. His commitment to excellence has been recognised through multiple culinary awards, marking significant milestones in a journey driven by craft and integrity.

Culinary Philosophy
My culinary philosophy is rooted in respect — for ingredients, for tradition, and for the people gathered around the table.
As Head Chef I believe great cooking begins long before the fire is lit. It starts with farmers who understand the rhythm of the seasons and with purveyors who approach their craft with integrity and care. Technique matters, but only insofar as it serves flavour, balance, and feeling.
I strive to create dishes that are thoughtful yet unpretentious, where every element has purpose and nothing is added without reason. For me, food is storytelling — a quiet dialogue between heritage and innovation, memory and discovery.
Each plate should feel both comforting and surprising: familiar enough to welcome you in, yet bold enough to leave a lasting impression.
